I have to apologize for the lack of posts over the past week, I’m currently traveling and visiting with my husbands family in Brazil (for the holidays). With the time difference and not having wifi 24/7 I hope you can understand! I think it’s always good to unplug and get some rest & relaxation when possible. On another note, I prepared a few special posts for you before I left and this is one of my favorites. It’s a Salmon Sashimi Bento Bowl with Zucchini Roll Up’s and it’s absolutely divine.
Looking for something on the lighter side in between Friendsgiving and all of the delectable holiday meals? Try this Roasted Cauliflower + Spinach Soup with Homemade Croutons. It’s simply veggies with no thickening ingredients such as heavy cream or added potatoes. It definitely does the tummy well while not cutting corners on flavor. I have discovered over the years that store-bought soups or pre-made soups even if they are labeled as healthy or all natural, include a few unnecessary ingredients that add-on not so nutritious calories. Ingredients such as potatoes, heavy cream added sodium or sugars.
Are you trying to follow healthy eating habits? I find that half the battle in eating healthy is having a good idea of what to cook. Eating healthy can be challenging especially when you need more of a variety when it comes to flavors. I’m not sure about you but I get bored very easily 🙂 Therefore, I continuously find myself switching it up and testing out new flavors. Sometimes they work and sometimes they’re a flop! It’s a fun game to play and thankfully I get to share the good ones with you. Seared Ahi + Soba Noodles is a dish that I love making, because it holds fresh and satisfying flavors. It switches things up with a very different flavor combo from the protein and seasonings used.
In need of a new and healthy lunch option? This beef and veggie bento bowl is a wonderful alternative! If you haven’t caught on already through previous posts, I love throwing together a colorful protein bowl. They’re fairly simple, quick to make and have everything you need. This one particularly is packed with protein, veggies and has a ton of nutritional value to keep you well fueled throughout the day. It’s like the ultimate protein bowl with a little Japanese twist.
Treat yourself to these crispy broccoli cakes, truth be told the flavor is fabulous! These little guys provide a warm and toasty meal for the chilly fall weather. They take all but 20 minutes to put together and are quite nutritious. I love having a veggie fueled meal when it comes to lunch and dinner. Broccoli is nutrient dense and is packed with vitamin C. Vitamin C is a powerful antioxidant which can protect the body from damaging free radicals. In addition broccoli on its own is low in calories and contains a wonderful source of dietary fiber.
Embrace the cool fall weather with this warm and delicious roasted butternut squash and swiss chard protein bowl. This dish highlights flavors of fall while being healthy and nutritious. I love taking traditionally hearty ingredients and creating something a bit lighter while still packed with flavor. This is a wonderful go-to week night dinner option and it’s super easy to throw together. The sweetness of the warmly roasted butternut squash paired with slightly salty sautéed swiss chard is quite gratifying. It’s the perfect healthy comfort dish for a cool evening and celebrating fall!
