Do you like healthy snacks that are super easy to make? Perfect, so do I… which is why I LOVE this simple and tasty recipe. When roasted, delicata squash turns into chewy amazing-ness. The flavor is slightly sweet and salty, satisfying that need for a quick and healthy bite. It’s also a great appetizer option that doesn’t add-on a ton of time to your overall menu. I like to pair them with a spicy yogurt aioli, which also takes seconds to whip up. Delicata is a lovely winter squash, one that I try to eat a lot of while they’re in season.

-1 large delicata squash
-1/2 cup nonfat greek yogurt
– 1 teaspoon sriracha
-1 small clove garlic, minced
-1/2 lemon, freshly squeezed
-2 teaspoons extra virgin olive oil
-salt & freshly cracked pepper
*I like to use all organic, GMO free produce & ingredients*
Preheat oven to 410 degrees farenheit.
Line a baking sheet with parchment paper. Slice your squash width wise (no larger than 1/2 inch each) and remove seeds from the center. Place your squash in single layer onto the baking sheet. Drizzle on a little extra virgin olive oil and a dash of salt on each side. Place into the oven and bake for 25 minutes, until golden brown and tender. Flip the squash at the 15-minute mark to ensure each side is evenly roasted.
For the aioli, mince up 1 small clove of garlic. In a small bowl, add your greek yogurt, garlic, lemon juice, sriracha, freshly cracked pepper & dash of salt. Mix together until smooth.
Serve the roasted delicata squash warm or chilled, enjoy!
