Oh hello…meet my new obsession, Greek Yogurt Bites with Crushed Hazelnuts, Wild Blueberries + Kiwi 🙂 This mouth-watering organic and all natural snack or even dessert can be put together in under 10 minutes. You can honestly use any of your favorite dried or fresh fruits and nuts. The particular combo I chose for this recipe happens to be one of my absolute favorites. I just really love incorporating blueberries and hazelnuts, especially during this time of year. The base of the snack is greek yogurt with a touch of honey, simply an amazing duo. It contains only natural, organic ingredients and it’s low in natural sugars.
There are no mysterious preservatives that we can’t pronounce and it holds actual nutritional value. I don’t know about you, but I am a huge fan of all of that. The more nutritional value the better. Like I’ve mentioned in other posts, having to weed through the snack aisle to find a healthy snack free of additives and a ton of sugar or salt just isn’t my thing. I’m more along the lines of snacks like this, this or even these. They’re simple to put together, all organic and satisfy that snack time craving. From the Greek Yogurt bites, you benefit nutritionally by getting a nice dose of calcium, potassium, magnesium and lean protein…all very helpful in promoting strong bones. The vitamin C and antioxidant kick you get from the fresh kiwi and dried blueberries is also a plus. You might already have all ingredients you need to whip this up, there are just 5!
Get creative and have fun with making this recipe. I’m thinking for my next batch, I will top on a few slices of fresh banana, chopped walnuts and maybe a little sprinkle of shaved dark chocolate?? Yes, I have a massive sweet tooth.
Hope everyone is having a happy November so far!
-1 cup non-fat greek yogurt (the Fage brand works well)
-1 Tbl organic honey
-1/4 cup crushed hazelnuts
-1/4 cup dried wild blueberries
-1 fresh kiwi
*I like to use all organic, GMO free produce and ingredients*
Line a 9 inch square cake pan with parchment. You can also use a baking sheet, whatever fits into your freezer best.
Thinly slice up your kiwi.
In a bowl combine your yogurt and honey. Pour your yogurt combo out onto the pan and spread flat creating a 1/2 inch thick layer. Layer on your kiwi slices, then sprinkle on your crushed hazelnuts and blueberries. I like to gently press the nuts and fruit into the yogurt to ensure they stick well.
Place into the freezer for 1.5 to 2 hours or until hard. Once hard, simply break into pieces and store in a plastic bag or your container of choice. Store in freezer and enjoy during snack time!
Prep Time: 10 minutes
Cook Time: Allow to set in freezer until hard (typically 1.5 to 2 hours)
