I always find myself trying to incorporate as many fruits and veggies as I can into my daily eating habits, I feel like you can never really get enough! The more color the better in my mind and definitely don’t let the lovely gray and purple hue of this smoothie deter you from making this wholesome and healthy recipe which contains zero dairy.
It’s refreshing, filling and has a wonderfully nutty flavor from the roasted flax seeds. It’s also a great way to incorporate spinach which provides you with a nice little boost of iron for the day. I use a mini magic bullet blender which fits all ingredients easily (with very little clean up which is always nice). This smoothie is wonderful to have for breakfast, a mid-morning snack or whenever you’re craving something healthy and chilled to cool you down. It’s one of my go-to smoothies for breakfast or when I need something to cool me off during these hot summer days.
–2 handfuls organic baby spinach
–½ cup organic frozen mango
–¼ cup organic frozen blueberries
–¼ cup organic green apple cubes
–1 tablespoon organic golden roasted flax seed (whole seeds)
–4 tablespoons coconut milk with 1 ½ cup chilled water
Start with filling your blender with the frozen produce (frozen mango & blueberries). Add in your 2 large handfuls of spinach. Add in your apple cubes and flax seed.
Pour in your chilled coconut milk and add in the water. Turn blender on and blend until smooth. Place into glass and enjoy.
