Happy first week of November! With this brisk weather and the holiday of eating (aka Thanksgiving) so near I am delighted to share this easy recipe with you. It’s a wonderfully crunchy, creamy and sweet dessert option if you’re looking for something on the lighter side. My CoCo Almond Milk Pudding is dairy-free and low in natural sugars. It definitely satisfies that sweet tooth craving while not being packed with preservatives, a ton of sugar and unknown additives.
With 5 very simple ingredients, you can create this recipe in under 20 minutes. Also, it requires very little clean-up as everything is created in 1 bowl. You very well could already have everything you need in your kitchen to whip it up. Now thats the kind of baking I like, quick, easy and tasty! The cocoa powder paired with almond milk creates a glorious flavor combo. The pudding is nutty, subtly sweet and perfectly rich all at the same time. -2 cups almond milk
-3.5 Tbl unsweetened coco powder
-4 Tbl tapioca flour
-1/3 cup organic cane sugar
-Pinch of Salt
-toasted walnuts for topping (optional)
*I like to use all organic, GMO free ingredients*
Place all ingredients into a bowl (minus the optional walnuts). Mix together with a whisk.
We’re going to cook the pudding using a double boiler. If you don’t have one, not to worry it’s super easy to create with just a medium sized pot and heat-safe bowl(i.e pyrex). Fill your pot with 2 inches of water and bring to a boil. Reduce the heat to a simmer and place your bowl on top of the pot. The bottom of the bowl should be about 2-3 inches above the water (not submerged).
Use your whisk to stir occasionally and cook for a total of 15 minutes, until the pudding becomes thick. The mixture begins to thicken around the 12 minute mark, it suddenly all comes together right at the end 🙂
Once thick, remove from heat and allow to cool (use a towel or oven mitts to remove the bowl, the edges can get hot). I like to place my pudding into individual mason jars or small bowls. Once cooled top with a large handful of chopped walnuts, serve warm or chilled.
Tip: I enjoy topping with walnuts, definitely choose your favorite nut. Also, I sometimes like to top with a few slices of fresh banana. It’s heavenly!
