I hope the holidays are treating everyone very well! This time of year just seems to get jammed packed for us and all of a sudden we find ourselves in the new year 🙂 I am traveling again over the next few weeks to visit fam although wanted to squeeze in this lovely Persimmon, Fresh Mint + Ricotta Salata Caprese recipe. I just had to share it with you, it honestly is such a great addition to any winter dinner whether your hosting or if it’s just for you during a weeknight.
A few weeks back I was invited to a hard cider tour and tasting at the AppleGarden Farm. This beautifully quaint farm is tucked away in Tomales (CA) and run by the sweetest couple, Jan and Louis Lee. They are the cider artisans behind the refreshingly light and crisp beverage. In the past, I have only had hard cider that was incredibly sweet and not something you could pair easily with meals. Their brew of cider could not be more opposite and I must say it was a welcomed change! It contains zero added sugars, flavorings or concentrates AND it’s gluten-free. In addition, their beverage is created 100% from fermented apple juice, solely from apples grown on their beautiful farm.

I have to apologize for the lack of posts over the past week, I’m currently traveling and visiting with my husbands family in Brazil (for the holidays). With the time difference and not having wifi 24/7 I hope you can understand! I think it’s always good to unplug and get some rest & relaxation when possible.
